A fluffy, golden South Indian donut that’s crispy outside, soft inside—perfect for breakfast or snacks!
You’ll need: 1 cup urad dal (split black gram), 1 tsp salt, 1 tsp chopped ginger, 1 green chili (finely chopped), 10-12 curry leaves, water, and oil for frying.
Rinse 1 cup urad dal thoroughly. Soak it in water for 4-6 hours (or overnight) until soft.
Drain the soaked dal. Blend it with minimal water (2-3 tbsp) into a smooth, thick paste. Test: It should hold shape when dropped from a spoon.
Transfer batter to a bowl. Add salt, ginger, green chili, and curry leaves. Whip it with your hand for 2-3 mins to aerate (makes it fluffy!).
Wet your hands. Take a small ball of batter, flatten it, and poke a hole in the center with your thumb. Classic vada shape—done!
Heat oil in a deep pan (medium-high). Slide vadas in gently. Fry 4-5 mins per side until crispy and golden brown. Drain on paper towels.
